Rhubarb Muffins

    Ingredients

    2 cups flour
    1 cup brown sugar
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    2 cups chopped fine rhubarb
    1 cup sour cream
    1 tsp. vanilla
    2 eggs
    1/2 cup butter
    Topping:
    1 Tbsp. butter
    1/3 cup brown sugar

    Directions

    Mix together dry ingredients, except brown sugar.  
    Mix together butter,brown sugar, eggs, and
    vanilla.   Add sour cream and dry ingredient
    mixture to egg mixture.  Mix well and add the
    rhubarb.  
    Mix butter and brown sugar for the topping.
    Put in muffin pans and sprinkle with the topping.
    Bake at 350 for 15 to 20 minutes.
