Pineapple Carrot Bread

    Ingredients

    3 eggs
    2 cups sugar
    1 cup oil
    1 cup grated carrots
    1 cup crushed pineapple
    1 cup nutmeats
    2 tsp. vanilla
    3 cups flour
    1 1/2 tsp. cinnamon
    1 tsp. baking soda
    1 tsp. salt

    Directions

    Beat eggs, add sugar, oil, and vanilla.  Sift dry
    ingredients together.  Stir in flour mixture with
    carrots and drained pineapple.  Add nutmeats.  
    Bake 45 minutes at 350.
