Lemon Raspberry Muffins

    Ingredients

    2 cups flour
    1 cup sugar
    3 tsp. baking powder
    1/2 tsp. salt
    1 cup fresh or frozen raspberries
    1 cup half & half
    1/2 cup oil
    1 tsp. lemon extract
    2 eggs

    Directions

    Combine flour, sugar, baking powder, and salt;
    mix well.  In bowl, combine half & half, oil, extract,
    and eggs; blend well.  Add dry ingredients; mix
    until moistened.  Fold in raspberries.  Fill paper
    muffin cups and place in muffin pan.
    Bake at 425 for 18 to 23 minutes.
