Jazzberry Muffins

    Ingredients

    1/3 cup butter
    2 1/4 cups flour
    1/3 cup sugar
    1 Tbsp. baking powder
    1/2 tsp. salt
    1/3 cup preserves of your choice
    3/4 cup milk
    2 eggs

    Directions

    Melt butter; set aside to cool.  
    Combine dry ingredients; mix well.  Add milk and
    eggs to melted butter; beat with a fork.  Add to dry
    mixture and stir.  
    Fill muffin cups with batter 1/2 full.  Place rounded
    teaspoon of preserves in the center of each.  
    Cover with remaining batter.
    Bake at 400 for 20 to 25 minutes, or until golden
    brown.
