Irish Soda Bread

    Ingredients

    1/4 cup sugar
    1 egg
    4 cups flour
    1 tsp. baking soda
    3 tsp. baking powder
    1 tsp. salt
    1/8 tsp. cardamom
    1/4 cup butter
    1 3/4 cup buttermilk

    Directions

    Combine flour, salt, baking powder, soda, sugar
    and cardamom in a large bowl.  Cut in butter until
    it forms coarse crumbs.  Beat egg lightly; add
    buttermilk.  Add to dry ingredients and stir until
    blended.  Turn onto floured surface; knead 2 or 3
    minutes.
    Divide in half; shape into 2 round loaves.  Place
    each in a greased pie pan.  Press down to fill
    pans.  With a sharp knife, cut across top of loaves
    1/2 inch deep.  Bake 35 to 40 minutes at 375.  
    Makes 2 loaves.
