Healthy Muffins

    Ingredients

    1 1/2 cup wheat bran cereal
    3/4 cups whole wheat flour
    1/4 cup light brown sugar or honey
    1 Tbsp. baking powder
    1/2 tsp. salt
    1/4 cup wheat germ
    1/4 cup oat bran
    1 egg
    1 1/4 cup milk
    1/4 cup oil
    1/4 cup molasses
    1/4 cup sunflower seeds
    1/4 cup pecan pieces

    Directions

    In a large bowl, soak 1 1/2 cup wheat bran cereal
    in 1 1/4 cups milk for a couple of minutes.  
    Meanwhile, in another bowl mix vegetable oil,
    molasses, then 1 egg.  Add egg mixture to bran
    mixture and stir thoroughly.
    Add the rest of the ingredients and stir until just
    moistened.  Add sunflower seeds and pecan
    pieces.  
    Fill muffin cups.
    Bake at 400 for 18 minutes.
    Makes 1 dozen large muffins.
