Cranberry Bread II

    Ingredients

    2 cups flour
    3/4 cup sugar
    1 1/2 tsp. baking powder
    1/2 tsp. soda
    1/2 tsp. salt
    1 1/2 cup cranberries, halved
    3/4 cup chopped walnuts
    2 Tbsp. grated orange rind
    1/2 cup orange juice
    3 Tbsp. melted butter
    1 egg, slightly beaten
    2 Tbsp. hot water


    Directions

    Sift flour, sugar, baking powder, soda, and salt
    together.  Stir in egg, orange rind and juice, butter
    and hot water.  Add to dry ingredients; mix
    thoroughly.  Fold in cranberries and nuts.  Place in
    greased 9 x 5 x 3 inch loaf pan.  
    Bake in 350 oven for 50 minutes or until cake
    tester inserted in center comes out clean.  
    Remove from pan; cool on wire rack.
