Ingredients :

1/2 lb ground lamb
  1/2 lb ground beef
  2 slices bread, day old and partially
     dried
  2 garlic clove, chopped fine
  2 tablespoons fresh parsley,
     chopped
  1 teaspoon salt
  1/4 teaspoon pepper
  1/4 teaspoon ground fenugreek
  1/4 teaspoon ground cumin
  1 egg, beaten
  1 tomato sliced
  1 onion sliced

TZATZIKI SAUCE directions below gyro

Directions for Gyros:

1. Mix lamb and beef in a glass bowl.

2. Crumb bread into the meat mixture.l

3. Add in the spices and mix very well.

4. Stir in the beaten egg.

5. Form the mixture into two large patties
and place on a medium heat grill. Cook
for
5 minutes per side or until the
mixture is thoroughly cooked to desired
texture.

6. While the gyro is cooking warm the
pita bread.

7. Slice the gyro and place on the warm
pita bread, top with sliced tomatoes,
onions, and Tzatziki sauce.

Tzatziki Sauce:

Ingredients :
     2 small cucumbers, peeled &
        seeded & diced
     1 1/4 cups yogurt
     2 tablespoons olive oil
     1 lemon, juice of
     4 garlic clove, minced
     1 tablespoon fresh dill, chopped
     white pepper
     salt

Directions

1.
Combine yogurt, olive oil, lemon juice,
garlic and pepper in a bowl.

2. Cover and refrigerate for one hour.

3.
Blend yogurt mixture with a whip until
smooth.

4. Dry cucumbers by patting with paper
towels.

5.Add Cucumbers and dill to yogurt
mixture.

6.Salt and pepper to taste.
