METRIC Conversion Units
Ingredients -

  1/4 cup melted butter
  1/4 cup lemon juice or dry sherry
  6 swordfish or halibut fillets cut 1/2
      inch thick

Directions

1. Mix butter and lemon juice.

2. Wipe fish dryl

3. Heat the grill or charcoals to a
temperature of glowing coals..

4. Grease rack for cooking, then add fish.

5. Baste the fish with sauce as it cooks
over the hot coals - on the grill.

6. Grill. Turn only once! Cook for about
15 minutes.

7. Fish flakes when tested with a fork.

8. Season to taste.

Suggested Sauce:
Ingredients -

     1 avocado, peeled and diced
     1/2 jalapeño pepper, finely chopped
     Juice of 2 limes
     2 tomatoes, diced
     1/3 cup red onion, sliced
     3 tablespoons fresh cilantro
     1 tablespoon olive oil
     Salt and pepper

Directions

1. Place the avocado, jalapeño, onion,
lime juice, tomato, chopped cilantro and
olive oil in a small bowl.

2. Mix well and season with salt and
pepper.
