Gammelost  Cheese, origin is Norway.  Hard, golden brown with a
strong flavor.  Use is eating and cooking.

Garlic  A bulb with pungent odor and flavor, used raw and cooked.  
Belongs to the liliy family. The bulb consists of a cluster of smaller ones,
each called a clove.  Should be peeled for use or crushed unpeeled in a
garlic press.

Garlic Powder  Ground, dried garlic cloves.  Powder has commercial
use in making various prepared meats.  Powder may be used in place
of garlic love to season meats, sauces, many other dishes.

Garlic Salt  Commercial mixture of table salt and garlic powder.  Used
like garlic powder.

Garnish  To decorate a dish with parsley, fruit slices, etc.

Geranium Leaf  Added to apple and other delicate jelly.  Try mixing
some of the jelly with cake filling for a delicate white cake.

Giblets  The edible small parts of dressed birds:  liver, heart, gizzard,
etc.

Ginger  Root of tropical fruit, dried and sun-bleached.  Aromatic, with
spicy-sweet, pungent flavor.  Sold whole, broken, or ground.  Has many
uses, including the flavoring of commercial ginger ale and ginger beer.  
Also used as spice in confections, partry, cakes, cookies and as
seasoner for many meat, pickling, and sauces.  Also used in blends of
curry powder and in oriental cookery.

Gjetost  Cheese, origin is Norway.  Hard, dark brown, with a sweet,
uncheese-like flavor.  Made from goat's milk.  Use is eating.

Glace  To coat with sugar syrup cooked to the crack stage.

Glaze  To make a smooth glossy surface by coating with a thin layer of
aspic, melted jelly, sugar syrup, icing, or fruit juice sweetened and
thickened with a little cornstarch.

Gorgonzola  Cheese, origin is Italy.  Clay-colored surface, white
inside with green veins.  Piquant flavor.  Pungent.  Use is eating, sliced
or crumbled on salad.

Gouda  Cheese, origin is Holland.  Usually red surface.  Semi-hard
texture, yellow inside.  Edamlike flavor if imported.  Domestic Gouda is
softer and may have a slightly sour flavor.  Use is eating.

Grate  To reduce foods to small particles by rubbing over grater or
using a grinder-grater.  

Gravy  Sauce made in pan in which meat, fish, or poultry was cooked.  
It includes pan drippings, usually flour, seasonings, cream or milk, or
stock.

Grill  To cook under broiler heat or over direct heat.  

Grind  To put food through chopper, or grind by hand with mortar and
pestle.

Greese  To rub inside of pan, mold, baking dish, with fat to prevent
food sticking to it.  Also means the cold fat left in frying pan or kettle.

Gruyere  Cheese, origin is Switzerland and France.  Hard, with holes.  
Tastes like Swiss.  In the US, Gruyere means a processed cheese that
is foiled wrapped and light yellow.  Use is eating and cooking.

Goulash  A thick meat stew with vegetables and paprika.
