A La King  Food prepared in a rich cream sauce.

Al La Mode  (a) Topped with ice cream.  (b) Marinated and braised
with carrots, mushrooms, onions, etc.  (roast beef a la mode).

Allspice  Dried ripe fruit of pimento tree.   Also known as Jamaica
pepper.  Sold whole and ground.  Flavor resembles blend of cinnamon,
nutmeg, and cloves.  Use in baking, and in seasoning some meat
cookery.

Amandine  With almonds.

American Cheddar  Cheese,  waxed yellow-brown or black surface.  
Cream to deep orange inside.  Mild flavor when fresh.  Sharper the
more cured and aged.  Use is eating, cooking and processing.

Anise Seed  Fruit of plant of parsley family.  Small, oval, usually
greenish-brown.  Flavor suggests licorice.  Used in Italian meat
cookery, salads, in many oriental dishes and pastries.  A Mexican
favorite, too.

Antipasto  Assortment of Italin appetizers, such assardines,
anchovies, peppery sausage, cnnedpimiento, tuna fish, etc.

Aperitif  A beverage served as an appetizer before a meal.

Asiago  Cheese, origin is Italy.  Dark surface, creamy inside.  Hard,
granular texture.  Piquant flavor.  Eating when fresh, grating when old
and drier.

Aspic  A savory meat jelly, with or without added gelatine, containing
bits of meat, fowl, fish, game, egg, or vegetables.

Au beurre  French term meaning cooked in or with butter.

Au Gratin  Baked with bread crumbs, cheese or both.

Au Jus  Served in its natural juices.

Au Lait  Made and served with milk  (café au lait).
