Black Bean and Salsa Dip



    Ingredients

    1 lime
    1/4 large red onion
    16 oz. can black beans, drained
    1/2 cup Mild, Medium or Hot Thick and Chunky
    Salsa (Ortega brand is our suggestion)
    1 Tbsp. lemon juice
    1 large clove garlic, crushed
    1/4 cup scallions, sliced
    cilantro (about 1/2 cup coarsely chopped)
    1/2 sweet pepper
    1 or 2 jalapeno pepper

    Directions:

    1. Prep garlic by using a garlic press or pounding
    it then place it in a large mixing bowl.

    2. Grate the lime, and try to obtain 2 tablespoons
    of juice. Add to the garlic and mix together.

    3. Finely chop the red pepper about 1/4 inch size
    then place in bowl.

    4. Remove the seeds and ribs from the jalapenos
    and mince with the red onion, place in bowl.

    5. Drain and rinse the black beans, place in bowl.

    6. Toss ingredient together.

    7. Add salsa and lemon juice to the bowl, toss and
    mix.

    8. Right before serving, add the coarsely chop  
    cilantro, stir it into the mix

    9. Add scallions for garnish

    10. Serve with pretzel chips, or hearty tortilla/corn  
    chips.
