Beer Chili

    Ingredients

    8 to 10 strips bacon, cubed
    4 lbs. stew meat
    3 onions, coarsely chopped
    3 stalks celery, coarsely chopped
    2 green bell peppers, coarsely chopped
    3 cloves garlic
    1 cup Beer
    6 whole cloves
    6 oz. chili powder
    1 - 6 oz. can tomato paste
    2 - 28 oz. cans and 1 - 16 oz. can stewded
    tomatoes
    1 hot green chili diced
    1 tsp. salt
    1 Tbsp. paprika
    2 large bay leaves

    Directions

    Cook cubed bacon.  Stir often, until bacon
    separates and starts to curl.  Add stew meat,
    onions, celery, peppers and garlic.  Cook until
    meat browns.  Stir often and drain fat.  Add beer,
    cloves, chili powder and tomato paste.  Stir
    thoroughly.  Add tomatoes with liquid, hot green
    chilis, salt and paprika.  Add bay leaves.  Simmer
    covered for four hours. Uncover and simmer
    another one to two hours.
