Date and Walnut Cake
1 cup boiling water 1 cup chopped nuts 1 tsp. soda 1 cup sugar 1 Tbsp. butter 1 egg, beaten 1 1/3 cup flour 1/2 cup chopped walnuts Icing: 8 oz. cream cheese 1 pkg. powdered sugar Cherries and/or nuts Directions Pour boiling water over dates and soda. Add sugar and butter. Cool. Add egg, flour and walnuts. Pour either in layer or loaf pan. Bake at 350 degrees for 30 to 40 minutes. For the icing, beat cream cheese. Add powdered sugar gradually. Smooth on cake. Garnish with cherries and/or nuts. |
