    Cherry Nut Cake

    Ingredients

    1/2 cup shortening
    1 1/2 cup sugar
    1/2 cup chopped nuts
    16 maraschino cherries, chopped
    2 1/8 cup cake flour
    1/4 tsp. salt
    3 tsp. baking powder
    1/4 cup evaporated milk, diluted with 1 tsp. vanilla
    and 1/4 cup cherry juice
    4 egg whites, stiffly beaten

    Directions

    Cream shortening. Add sugar; cream together
    thoroughly.  Mix nuts and cherries together;
    dredge with 1/8 cup flour.  Sift remaining flour, salt
    and baking powder together.  Add to creamed
    mixture alternately with diluted milk.  Blend in nuts
    and cherries.  Fold in beaten egg whites.  Pour
    into greased 8 x 8-inch square pan.
    Bake at 350 for 45 minutes.
