    Irish Potato Cake

    Ingredients

    2 cups sugar
    1/2 cup butter
    1 tsp. vanilla
    1 tsp. cocoa
    1 cup warmed mashed potatoes
    2 cups flour
    2 tsp. baking powder
    1/4 tsp. salt
    1 tsp. soda
    1/2 cup milk
    1 cup chopped nuts
    3 egg whites, stiffly beaten
    Filling:
    1 cup cream
    1 cup sugar
    3 egg yolks, beaten
    1 lump butter
    1 cup chopped nuts
    1 box angel flake coconut

    Directions

    Cream sugar and butter.  Add vanilla, cocoa and
    potatoes.  Sift dry ingredients.  Add alternately
    with milk.  Fold in nuts and egg whites.  Pour into 2
    prepared layer pans.
    Bake at 350 for 35 minutes.
    For the filling, cook cream, sugar and egg yolks
    until thick.  Add butter; stir until melted.  Stir in
    chopped nuts and coconut.
    Frost cake when cool.
